Savory Chickpea Pancakes

I know I have friends who plan meals ahead of time. Maybe even pre-cook for an entire week. I think that’s awesome. But for me it’s just so not how I typically operate.  I’m a fly-by-the-seat-of-your-pants, let’s-see-what’s-in-the-fridge, totally-wing-it cook.

That’s just how I roll. And sometimes inspiration strikes and I end up making a meal like this one. First, I made a big pot of curry butternut squash soup and wanted something to go with it. So I thought I’d try making chickpea pancakes as a side dish. Oh man, these are great. Super easy and really tasty.

Spaghetti Squash Pancakes + Fresh Tomato Sauce

Ever just crave spaghetti squash? I do. It’s not something I eat all the time, but when I’m in the mood, it’s the best. Usually I steam it and serve it with a marinara sauce loaded with vegetables. That’s exactly what I did this week. But I had quite a bit of squash leftover, so I decided to make pancakes the second night.

I made a fresh tomato sauce to go on top. I love making this in the summer with yummy fresh tomatoes and basil. I made it first so the tomatoes could marinate while I made the squash pancakes. I sauteed some fresh spinach and made a balsamic reduction also. Sounds like a lot of steps, but it really was easy.

Strawberry Macadamia Pancakes For Momma

When my 15-year old son, Jonah, was a toddler, I desperately wanted him to like pancakes. I made them every Sunday morning and every Sunday morning he chucked his portion from the tray of his high chair onto the ground. I have video to prove this. Looking back, I sort of don’t blame him, I have a feeling they were kind of crappy pancakes from a mix.

So imagine my delight when I made this recipe for my family this past Sunday and Jonah said they were the best pancakes he’d ever had in his whole life. The greatest early Mother’s Day present I could get. My kid likes pancakes. Yay! He likes my pancakes. Yay!! He likes my VEGAN pancakes. Yay!!!
