Vegan Vanilla Cupcakes + Salted Caramel Frosting

I don’t make things like this very often any more. But my hubby turned 50 last week and well, the man deserved a decent dessert to celebrate his big day. We spent his birthday weekend hiking and listening to live music in and around San Antonio. If you go, I recommend Government Canyon for some outdoor time. Beautiful scenery and well marked trails. For the music part, we went to Floore’s Country Store in Helotes and the iconic honkytonk, Gruene Hall in Gruene. Both are so fun and very Texas-y!

Ah, back to the cupcakes. I adapted a recipe from Chloe Coscarelli’s new cookbook: Chloe’s Vegan Italian Kitchen – which is an awesome book, btw. Her recipe is Raspberry Tiramisu Cupcakes and what I made is nothing like it. I will try out the full recipe at some point, but what I had in mind was a little more scaled back.  So I just made the vanilla cupcake portion of the recipe and it is perfect. Tasty. Moist. Light. Perfect.

Creamy Orange-Vanilla Smoothie

Growing up in a suburb outside of Atlanta, my free time was often spent hanging out at Perimeter Mall with my friends. Checking out black light posters and other stupid stuff at Spencer’s gifts; and on a good day, getting an Orange Julius. Making this little smoothie takes me back to that time. I can still picture it all.

I don’t really know what was in an Orange Julius. Probably some things I wouldn’t want to have now. But what I put together today is simple, yummy and perfect for a summer afternoon by the pool. I started with some toasted coconut almond milk from Califia Farms. This is my new favorite brand. I get it at Whole Foods. Check it out.

Raw Coconut Cheesecake with Sweet Mango

So if you said, “Your favorite fruit? 30 seconds. Go.” I’d say, without hesitation, MANGOES! Oh my, oh yes, mangoes. Can you think of a sweeter, sexier fruit? No way. Nothing compares. Mangoes are in a class all by themselves. No wonder they are called the King of Fruits and the Love Fruit.

Uh huh, the love fruit, baby. Among their myriad of benefits, mangoes are also considered an aphrodisiac said to boost the libido and regulate hormones. So, with Valentine’s Day coming up, um, maybe you’ll want to give this little recipe a try.

Hippie Triple Ginger Hemp Granola

I was asked to write a bio recently and so I described myself as: a yoga instructor, vegan food blogger, stand up paddleboard (SUP) enthusiast and dedicated granola eater. There you have it…granola is actually a part of my identity. I love it so much. I love making it. I love eating it. And I love sharing it with other people.

Being crunchy-nutty is something I really do embrace. I like to think of myself as a kind, loving, earthy, hippie momma. I like real food made by hand. I say namaste and mean it. I am an open-minded, liberal-leaning, tree-hugging granola eater and this is my latest granola concoction.

Little Lemon Tarts

When life gives you lemons…I say make lemon tarts. That is, raw, vegan, gluten-free, amazingly delicious, lemon tarts. I found this recipe on a blog, just randomly search for lemony ideas. It’s a knock off of the Hail Mary Meyer Lemon Miracle Tart. I love this brand when I’m in the mood for a little treat.

Last week, it got a little cold here in Houston, we had a hard freeze and everything. So, I decided that I better harvest the last remaining lemons from the Meyer lemon tree in my backyard. I love this tree. It produces the most wonderful, juicy lemons. I treasure every single one.

Vegan Eggnog French Toast

Merry Christmas yogis! Made the best brunch for my family this morning and had to share. It was one of those perfect mornings. Yummy tasty holiday-inspired french toast, vegan apple sausage, green juice and coconut chai. Believe it or not, this was all before we opened presents. Now that my boys are teenagers, everything is different. They SLEPT IN until after 10am. Which when I think back to when they were little, it’s sort of hard to fathom.

This recipe comes from the back of the So Delicious coconut milk eggnog carton. So I can’t take much credit for it, but it’s so awesome…it’s worth a post on Christmas day. The prep could not be easier. Blend banana, eggnog, spices and vanilla and pour into a pie plate.
