Kale Cabbage Salad

You know how sometimes you make a salad and you just nail it. The taste is just right. The texture is perfect. The vegetables and dressing co-mingle like they were meant to be together. This is the salad you have been looking for your whole life. The love of your life salad, if you will.

Well, I made that salad tonight. I’m a huge fan of kale salads, but I’ve made many that have fallen flat. The kale tastes too bitter or something just isn’t quite right. But tonight, ah tonight, the kale salad sang and it was a beautiful thing.

Roasted Pumpkin Wild Rice + Pumpkin Seed Pesto

Hello jeans! Hello crisp air! Hello October! I have a fondness for the Fall. Although the leaves don’t actually change colors here in Houston until closer to December, we still have a change of seasons. And for me that means one important thing: comfort food.

I’m a complete sucker for the pumpkin displays at the grocery store. So the other day I picked up a little pie pumpkin and decided to roast it and serve it with simple wild rice pilaf. I came up with the pesto idea when I was cleaning up the seeds. It’s really nice to use the entire vegetable.

Goji Berry Chocolate Granola

How is it even remotely possible that I have been writing this blog for nearly six months and I am just now posting a granola recipe? I mean come on…yoga + granola…it just sort of goes. Don’t ya think?

I love having homemade granola in the house. It’s so easy to make and the variations are endless. The inspiration for this recipe came from a recent trip to my local health food/homeopathic store called the Natural Kitchen. Such a cool little shop. I’m amazed by how much they pack into this tiny little storefront. But I always seem to find exactly what I need whenever I stop in.
