Savory Chickpea Pancakes

I know I have friends who plan meals ahead of time. Maybe even pre-cook for an entire week. I think that’s awesome. But for me it’s just so not how I typically operate.  I’m a fly-by-the-seat-of-your-pants, let’s-see-what’s-in-the-fridge, totally-wing-it cook.

That’s just how I roll. And sometimes inspiration strikes and I end up making a meal like this one. First, I made a big pot of curry butternut squash soup and wanted something to go with it. So I thought I’d try making chickpea pancakes as a side dish. Oh man, these are great. Super easy and really tasty.

Vegan Caesar Pasta Salad

I’ve been making variations of this salad forever. It’s so great to take to a potluck because it can feed a lot of people. When the weather warms up (it’s pretty much summer here in Houston now), this salad is just what I’m in the mood to eat.

Traditional Caesar salads include parmesan cheese and anchovies. To make it vegan, I include nutritional yeast to get the cheesy taste and kelp powder to mimic the fish flavor. You should be able to find kelp powder at Whole Foods and maybe even your local grocery store in the organic spice section. (Houston peeps, I got mine at HEB.)  Most Caesar salads also include croutons which I skipped this time, but if you like that, make a batch using day old bread cut into cubes and sauteed with olive oil, salt and pepper.

Creamy Dreamy Broccoli Soup

It got down into the 50s this week in Houston…brrrrrrrrr. This is when we all get our puffy coats out, if we even own a coat.  So it was the perfect time to make a batch of soup to have around.  I love just about any kind of vegetable-based soup. And ever since I got my Vitamix, I like any excuse to put stuff into it.

This recipe could easily be creamy dreamy asparagus soup or pea soup or spinach soup or whatever-you-want-to-put-in-it soup. The formula is simple: steamed vegetables + cashews + vegetable broth + almond milk.

Start by steaming the broccoli and then the potatoes:
