Macrobiotic Bowl

Food fascinates me. Well, clearly, I write a blog about it. Seriously, I love how I introduce some new thing about food into my life and then it leads to something else. Or I meet someone or go somewhere and learn something completely new.

Eating an amazing meal in Boulder, CO inspired me to transition to vegetarian eating. Reading the World Peace Diet during my yoga teacher training affirmed my commitment to a vegan lifestyle. My first macrobiotic meals, at Casa de Luz in Austin and Green Vegetarian Cuisine in San Antonio, felt life changing too.

Although, I’ve only had a few macrobiotic meals so far, I love the way they make me feel. Balanced. Energized. Vibrant. Healthy. There is something to it and I want to learn more.

Mess o’ Greens Gumbo

With Fat Tuesday tomorrow, it seems like the perfect time to make a big old pot of my favorite gumbo: Gumbo Z’Herbs or as I like to call it Mess o’ Greens Gumbo. I adapted my recipe from the Gumbo Shop, a restaurant in New Orleans, where you can get, believe it or not, vegan gumbo. Yes, vegan gumbo in a town known for its seafood and andouille sausage and cooked gator.

I even made my batch gluten free for the first time by using GF all purpose flour in my roux. And it worked with a little help from some xanthan gum. Just whisk flour, xanthan gum and olive oil together until it smells like popcorn and turns the color of peanut butter.

Green Smoothie Deconstructed

I love it when people ask me what I put in my green smoothies. This is the kind of conversation that I truly look forward to having with someone. It’s a fun give and take. I know the way I make my smoothies has been influenced by what I have learned from other people and a lot of experimentation.  ‘Cause, let me tell you, I have made some pretty yucky smoothies in my time.

So I thought I’d break down the different components of my smoothie. This is SO not scientific in any way. I’ll share some nutritional info, but do your own research and trial and error to see what is right for you.

Liquid Base

Nut milk

Rice milk

Coconut milk

Coconut water

Roasted Poblano Sweet Corn Chowder

I’ve been thinking about making this for at least a week. I wanted to make a lighter version of corn chowder with a little Texas twist to it. So I added roasted poblanos and a simple fresh salsa to my version.

Well, I actually grilled the peppers and corn because it’s way too hot here to roast anything.  And I grilled some kale to throw in to give it a little nutritional kick. If you’ve never grilled kale, please give it a try…it’s soooooo good.

Eat More Kale

I’m obsessed with kale. There, I said it. I eat (or drink) it practically every day. It’s loaded with tons of nutritional benefits. Google it.

But true confession, I haven’t always been a fan. Several years ago, when I lived in Cincinnati, OH, I belonged to a CSA (Community Supported Agriculture) farm. And no matter the season, it seemed like we always had lots of kale included in our share. At the time, I didn’t really know what to do with it and frankly had not acquired a taste for it.

Not sure when I turned the corner, but when I began eating more clean vegan meals, I reintroduced kale to my diet. I started by adding it to my smoothies and have branched out from there. Here are a few ways l like it. Once you get hooked, you won’t go back. Trust me.
