Maca Maple Cashew Granola

Standard

IMG_2232

I’m a yogi and I make granola…a lot. This is a stereotype that I wholeheartedly embrace. I’ve posted several granola recipes in the past two years, but this one is extra special to me.

It’s a standout for two reasons: first, it’s CLUMPY and second, it has MACA.

I have been trying for so long to come up with a tasty-not too sugary-clumpy-chunky granola recipe. It’s harder than you’d think. Well, this recipe has the clumpy thing going on and I love it. So while it’s still great as breakfast in a bowl with let’s say cashew milk (oh, man), it’s also just an awesome snack that you can put into a little wax paper bag and be on your way.

Raw Coconut Cheesecake with Sweet Mango

So if you said, “Your favorite fruit? 30 seconds. Go.” I’d say, without hesitation, MANGOES! Oh my, oh yes, mangoes. Can you think of a sweeter, sexier fruit? No way. Nothing compares. Mangoes are in a class all by themselves. No wonder they are called the King of Fruits and the Love Fruit.

Uh huh, the love fruit, baby. Among their myriad of benefits, mangoes are also considered an aphrodisiac said to boost the libido and regulate hormones. So, with Valentine’s Day coming up, um, maybe you’ll want to give this little recipe a try.

Little Lemon Tarts

Standard

Image

When life gives you lemons…I say make lemon tarts. That is, raw, vegan, gluten-free, amazingly delicious, lemon tarts. I found this recipe on a blog, just randomly search for lemony ideas. It’s a knock off of the Hail Mary Meyer Lemon Miracle Tart. I love this brand when I’m in the mood for a little treat.

Last week, it got a little cold here in Houston, we had a hard freeze and everything. So, I decided that I better harvest the last remaining lemons from the Meyer lemon tree in my backyard. I love this tree. It produces the most wonderful, juicy lemons. I treasure every single one.

Heather’s Raw Oatmeal Raisin Cookie Dough

Heather is one of my YTT classmates and she brought these delicious treats to share with our group. I warn you now, these are a little addictive. Very hard to have just one. And it’s crazy, but they really taste like oatmeal raisin cookie dough, but are made with super healthy ingredients like cashews, hemp seeds and shredded coconut.

Cherry Almond Prana Bars

Standard

Think of this as a little gift to yourself. A healthy snack that you can take with you when you’re on the run and need a little pick-me-up. Great for before or after yoga or any activity for that matter. Nice for kids lunches, too.

In yoga, prana is life energy that is connected to our breath. In Light on Yoga, B.K.S. Iyengar says, “Prana means breath, respiration, life, vitality, wind, energy or strength. It also connotes the soul as opposed to the body.” So it’s probably some kind of blasphemy to call this recipe “prana bars,” but if Mr. Iyengar tasted these, I bet he’d forgive me.

The recipe could not be any easier. Throw healthy stuff in a food processor. Shape the mixture into bars — that’s pretty much it.

Bananas Foster Quinoa Porridge

Standard

Until I moved to Houston, I had never been to New Orleans. Hard to believe, I know. Such a fabulous city and I’m completely in love with it now. The people are probably the friendliest in the entire country and the food is beyond compare. Going to New Orleans as a vegan can be a challenge, but certainly not impossible. I was inspired by the city’s most famous dessert, to make this super satisfying, yummy vegan breakfast porridge.

To start, I made a batch of quinoa, which is a wonderful gluten-free grain that is a breeze to make. Just pick up a package, any kind, white, red, black, and follow the instructions. This can be done in advance, the night before is ideal. I used the tri-color quinoa from Trader Joe’s.

I Like It Raw Oatmeal

Standard

Okay, I know oatmeal is good for you, but a big bowl of cooked oatmeal sits in my stomach like a ton of bricks.  I hate that feeling, so I’ve avoided eating oatmeal for years.  Then a few months ago, I bought my first raw food cookbook, Raw Food: A Complete Guide for Every Meal of the Day. I expanded on a recipe for muesli that has become my favorite breakfast.  It’s different every time, based on what I have on hand.

The base is rolled oats, nuts, seeds and unsweetened coconut.Image
