Festive Cranberry Wild Rice Salad

Tis the season for hosting gatherings, sharing meals and savoring moments. I brought this simple salad to a holiday party recently and it was a hit. I knew I wanted to use fresh cranberries, but honestly didn’t really know how it was going to turn out. Well, it worked and I was asked by several guests for the recipe, so here you go.

I cooked some Lundberg Countrywild rice according to the package directions, but you could use any wild rice really. Then while the rice was still warm, I added chopped fresh cranberries so they would soften but not be too cooked. I chopped celery, apple and pecans to add. The whole thing was pulled together with a simple cranberry vinaigrette. I found the most amazing cranberry vinegar here in Houston at an oil and vinegar store called Vom Fass. If you can’t find that flavor, simply use a plain balsamic vinegar.

Roasted Pumpkin Wild Rice + Pumpkin Seed Pesto

Hello jeans! Hello crisp air! Hello October! I have a fondness for the Fall. Although the leaves don’t actually change colors here in Houston until closer to December, we still have a change of seasons. And for me that means one important thing: comfort food.

I’m a complete sucker for the pumpkin displays at the grocery store. So the other day I picked up a little pie pumpkin and decided to roast it and serve it with simple wild rice pilaf. I came up with the pesto idea when I was cleaning up the seeds. It’s really nice to use the entire vegetable.

Two Potato Salad

I’m a potato salad freak. I love it. But, it’s hardly ever vegan. It’s usually loaded with heavy mayo and eggs. Not my thing. So I came up with this version and I get to be freaky in love with it.

I think my passion for potato salad goes back to when I was a kid. I’m pretty sure my grandmother thought it was an important food group for growing children. She was so happy whenever she saw how much I loved potato salad. Looking back, it was kind of weird, but in a sweet way.

Well, this recipe couldn’t be easier. Steam potatoes, chop a few veggies, toss it with vegan mayo and some seasonings. The secret ingredients are a little white wine and fresh thyme. I think it works and is way healthier than the mayo/eggy stuff you usually get.

Beet Red Juice

I’m usually a green juice girl all the way. But, oh my, this is really good. Fun departure from my usual morning juice. It’s so great to get nutrients from different sources and a rainbow of colors.

So to make Beet Red Juice, place the following organic fruits and vegetables in your juicer:

1 cucumber, chopped in large chunks

2 stalks celery, chopped

1/2 beet, chopped

1 cup black or red grapes, taken off stem

1 red apple

Pour into a fancy glass and love it.
