Spent an amazing weekend at Wanderlust Festival Austin recently. This year’s event was just as wonderful as last year’s or maybe even a little better. The festival includes tons of yoga classes, workshops, music, cool vendors and more. It’s a wonderful time to connect with friends, do LOTS of yoga of course and include a bit of wandering.

Yogis tend to be seekers and part of that path includes straying off a set course from time to time. This is usually where the good stuff happens: serendipity, growth, discovery.

Casa De Luz Sun Cheese

Just got back from a week-long Ashtanga training in Austin, Texas. Got to study with David Swenson and his wife Shelley Washington. David wrote the book on Ashtanga yoga that we used in my 200-hour training. It was an honor and privilege to spend time with him. David brings an amazing depth of knowledge and a delightful sense of humor to his teaching.

There were nearly 50 students in our class. I walked in not knowing a single person and left with several special friends. Yoga has a funny way of doing that. One night a group of us went to Casa De Luz for dinner. It’s a macrobiotic, vegan, gluten-free, seasonal, locally-sourced, organic restaurant. I’ve never been anywhere like it. Not far from downtown Austin, but it feels like it’s a world away.

Korean BBQ Tempeh Tostadas

One of my favorite things about moving to Texas is getting a chance to spend some time in Austin, which very well may be the coolest city in America. SXSW was in full swing when I was there this past weekend. I stumbled upon SouthBites, a curated food truck area. Yes, curated! Each truck was especially chosen by Austin Top Chef Paul Qui just for SXSW.

This recipe is inspired by the menus I saw at the various food trucks. Funky fusion is in and everything just seems a little hipper if you add Korean BBQ to it.
