I’m not a plan ahead kind of person much. Especially when it comes to cooking. But I’m always happy when I make overnight oatmeal. This version is especially decadent and can be a yummy dessert as well.
It all starts with a mason jar.
I added rolled oats, chia seeds, goji berries, cocoa powder and maple syrup to my jar. Then a can of coconut milk and stirred it all up. In the morning, I stirred it some more and served it topped with more goji berries and cacao nibs. It seemed a little too good for breakfast, but I got over that pretty fast.
Wonderful, filling way to start the day. Goji berries and chocolate are the best combination. And as an added bonus, goji berries are a superfood antioxidant that help boost your immune system. Boom!
Chocolate Goji Berry Chia Oatmeal
Serves 2
1/4 cup rolled oats
1/4 white chia seeds
2 Tbsp goji berries
1 Tbsp cocoa powder
1 Tbsp pure maple syrup
1 can coconut milk (I use the full fat, but light would be fine too)
Toppings
Goji berries
Cacao nibs
Maple syrup
Ground flax seed
In a large mason jar, add oats, chia seeds, goji berries, cocoa powder and maple syrup. Add 1 can of coconut milk and stir to combine completely. Place in refrigerator overnight. In the morning, top oatmeal with more goji berries, cacao nibs, maple syrup and ground flax seed to taste. Serve cold or warm.
