I crave it. You get to read about it. Really wanted this today. It’s getting pretty warm down here in Houston, and this little drink made me so happy.
Also, our basil plants are finally doing well. So every time I look outside they seem to be calling my name…”Hey you, foodie yoga girl, do something creative with us.”
This is actually a big deal. We have had the hardest time growing things here. The growing season starts in February, but we always forget because we’re still thinking about gardening in the Midwest. By the time we figure out we should be planting things, it starts getting hot and everything gets fried.
This simple little drink is actually good for you, too. Pineapple contains bromelain which is known for it’s anti-inflammatory properties. So if you’ve got a little tennis elbow or let’s say, a sprained toe from yoga, pineapple is your friend. Aloe vera juice also has healing properties, so I threw a little in the mix. I liked it. Hope you do, too.
Pineapple Basil Slushie
Serves 2-3
2 cups fresh pineapple, chopped
1/4 cup fresh basil
1 cup coconut water
1/4 cup whole aloe vera juice (optional)
2 cups ice
1 tsp agave or other sweetener
Place all ingredients in blender and blend until smooth.
Note: If you are feeling wacky and want to turn this into a cocktail, I think it would be great with a little vodka or rum.
YUM!!! I must try those!!!
Oh yeah! You’ll love it. Make sure your pineapple is super ripe.
