Okay, I know oatmeal is good for you, but a big bowl of cooked oatmeal sits in my stomach like a ton of bricks. I hate that feeling, so I’ve avoided eating oatmeal for years. Then a few months ago, I bought my first raw food cookbook, Raw Food: A Complete Guide for Every Meal of the Day. I expanded on a recipe for muesli that has become my favorite breakfast. It’s different every time, based on what I have on hand.
The base is rolled oats, nuts, seeds and unsweetened coconut.
Then I add all kinds of healthy stuff, like ground flax, chia seeds, wheat germ and my personal favorite, Maca powder.
I top everything off with a little sweetener, agave or maple syrup, and almond milk. The result is a super satisfying breakfast that gives me tons of energy for my workouts and yoga practices.
I Like It Raw Oatmeal
Serves 1 Adapted from Raw Food: A Complete Guide for Every Meal of the Day
1/3 cup Rolled oats
1 Tbsp Pecans
1/2 Tbsp Hazelnuts
1/2 Tbsp Sunflower seeds
1/2 Tbsp Unsweetened coconut
1/2 Tbsp Ground flaxseed
1/2 Tbsp Chia seeds
1 Tbsp Wheat germ
1 tsp Maca powder
Agave nectar or maple syrup, to taste
Non-dairy milk, such as almond, hazelnut, flax, rice or coconut
Mix everything together in a pretty bowl. Top with sweetener, if desired, and almond milk.
